Bursa geleneği. Cevizli Lokum
-özellikle de eskiden- kınaların
olmazsa olmazıydı. Bu özelliği
ile halk arasında “Kına Lokumu”
olarak da biliniyor. Kına evinde
muhakkak misafire ikram
ediliyor.
Malzemeler:
1 kilo un
1 kibrit kutusu maya
5 yemek kaşığı tereyağı
1 su bardağı ceviz içi
1 çay kaşığı yenibahar
Yapılışı:
Un, su ve maya ile
hamur tutulur. Hazırlanan hamur
elle tek kat olarak açılır. Ceviz
içi 3 yemek kaşığı tereyağında
yenibaharla kavrulur. Elle açılan
hamur, üstüne dökülen ceviz
içli karışımla birlikte rulo haline
getirilip dilimlenir. Tereyağının
kalanı tepsiye dizilen lokumun
üstüne ve altına sürülüp, orta
hararette fırında pişirilerek servis
edilir.

tatlılarından... Kimileri Cennet
Künkü diye biliyor kimileri de
Cendere Baklavası… Özellikle
bayramların vazgeçilmez
tatlısı… Şimdilerde pek
yapılmasa da önümüzdeki
bayramlarda yapılması dileğiyle
tarifini veriyorum.
Malzemeler:

Nişasta
1 rulo kaymak
250 gram tereyağı
1 kilo şeker
2 dilim limon
4 su bardağı su

One of the famous fruits of Bursa
is the wild strawberry. As being

for Keles area, the place of wild
strawberry is special especially
with it’s vitamins that are good
for our health. You can prepare
jam, you can use it in cakes and
deserts and give taste to your
personally created flavor. With it’s
unique smell and taste, the wild
strawberry identical to Bursa, is
a symbol of Bursa not only for
Turkey, but also for whole world.
Turkish Delight With Walnut
One of the unique breads
of Bursa. It’s not clearly a
bread, some kind of pastry. An
unforgettable Bursa tradition
which has started to be sold in
Bursa bakeries. Turkish delight
with walnut used to be necessity
for henna nights. With this
specification it’s also known as
the “Henna Delight.” It’s always
served to guests in the henna
house.
Things you need:
* A kilo of flour
* A matchbox sized yeast
* 5 table spoons of butter
* A glass full of nut meat
* A tea spoon of pimento
Preparing:
The paste is
prepared with , flour, water and
yeast. The prepared paste is
opened with hand as a single
layer. The nut meat is roasted
with pimento with three table
spoons of butter. Hand opened
paste, is sliced after rolled with
the mixture of nut meat that is
poured on. The remaining butter
is applied to the top and the
bottom of the delight, serviced
after cooked in moderate heat.
Paradise Tile ( Mangle Baklava)
One of the oldest Bursa
desserts. Some call it paradise
tile, some call it mangle baklava.
An essential dessert especially
for the holidays. Event though
it’s not prepared today, I’m
giving the receipt with the wish of
seeing it in the holidays.
Things you need :
* A kilo of flour
* Starch
* A roll of clotted cream
* 250 gr of butter
* 1 kilo of sugar
* 2 slices of lemon
* 4 glasses of water
Preparing :
The paste is
prepared with flour and water.
The prepared flour transforms
into pastry by opening with wild
starch. Each pastry is wrinkled
from both edges by covered
onto a rolling pin. Filling it with
nut meat is an option. All the
shaped pastry is placed into the
pre heated tray and egg yolk is
treated on. Put in oven until the
top fried well.
Water and sugar is boiled for
sorbet and bottom is closed
after the lemons are thrown
in. The prepared sorbet is left
for cooling. The cold syrup is
poured on the dessert in the tray.
After put on service plate and
left for cooling, clotted cream
is squeezed in. Serviced with
walnut or green pea nuts.
Angelica Jam
Angelica ( angel weed) is a rare
plant that found in the unique
flora of Uludağ. Even though
Angelica Jam is not found easily
these days, the elders know
about it. Ulus patisserie is one of
the rare places where this jam is
prepared, the recipe is from the
owner Mrs. Akile
